Slice a medium onion finely and fry in a non-stick pan in spoonfuls of best olive oil, until the colour begins to change, If the onion seems to be scorching, add a little water to the pan.Add a pound of sliced mushrooms to the pan and cook through.It is great if more than one kind of mushroom is used. Season with salt, pepper and a clove of crushed garlic. Add about a 1/2 pint of water or stock(chicken stock is ideal) and stew.for a few minutes. Disperse some cornflour(cornstarch) in a couple of spoonfuls of water. Add to the stew stirring as you add. Cook until slightly thickened.Add a dash of Worcester sauce.Just before servingallow to go off the boil and add a couple of generous spoonfuls of half fat Crème Fraiche(soured cream ), don't bring right back to the boil, it might separate. Quantities and seasonings are flexible. this is one of those recipes you cook by instinct. Serve with Basmati rice (the lowest GI rice ) or a flat pasta.
