Hi Allan, The only thing I'd watch out for is that the 6 PM boundary (or whatever you decide) doesn't start creeping in either direction. 2 days is 2 days, and you even have a nice mnemonic for it, but it's not quite as unambiguous as "days that start with S." I have occasionally shifted my weekend to start and end earlier for some special event, but I rarely do because of this clarity issue and because I've found I can eat pretty well even within the constraints a non-S day. In sum, I have no problem with it at all if you really think you can stick by it, but be careful. Maybe the gain of including a "peak" time in your S time trumps the clarity issue, but there's at least a little danger it'll work the other way around.
