While I'm probably the last person anyone wants to chime in on a sugar substitute right now :-), I can help a little with the "what the heck is it" part: Splenda is a brand name for sucralose, which is chlorinated sugar -- three hydroxyl groups out, three chlorine atoms in. You might go "Eek! Chlorine? Bleach?", but it's the same chlorine as in table salt and tomatoes. Replacing the hydroxyl groups with chlorine means that sucralose goes in one end and comes out the other undigested.
